So I am doing the WHOLE30 and have turned to a couple of my favorite Paleo Cookbooks. One of them being Well Fed. Click HERE to find it on Amazon.
I tried the Scotch Eggs and they were YUMMY!!!!
Here is what you need:
2 lbs of ground pork
2 teaspoons of salt
a teaspoon of ground black pepper
1/2 teaspoon of nutmeg
pinch cinnamon
pinch cloves
1 teaspoon of dried terragon leaves
1/4 cup of fresh parsley leaves, minced
1 tablespoon dried chives
2 cloves garlic, minced
8 large eggs, hard boiled and peeled
Bag of plain pork skins
2 eggs
Preheat the oven to 375 and cover a baking sheet with parchment paper. I used aluminum foil.
Mix all the seasoning and meat together in a bowl. Roll each piece into a ball then flatten it out. Take each flat piece out and wrap it around the egg (like in my picture) until the egg is completely covered with the meat.
If using the pork rinds, you need to crush them up. The cookbook recommends a food processor, but I just closed the bag with one had and used my other to press down and crush it up real good. It worked just fine.
I then put the two eggs in a small bowl and stirred. I took the crushed pork skins and poured them out on a plate. I rolled my meatballs around in the pork skins, then in the raw eggs, then again in the pork skins.
I placed them on my cooking sheet and cooked for 25 minutes. Then I increased the temperature to 400 and cooked an additional 5-10 minutes (you can tell by how they look)
This recipe obviously makes 8 but I'll tell you that you will be lucky if you can eat 2. These are VERY filling. They taste AMAZING!!!!! I wish my photography skills were better.

ReplyDeleteYOu can find Tarragon leaves in the produce section usually in a clear hanging container. Not sure where you live but any whole foods or Kroger will have them.
ReplyDeleteA bar here in Tulsa had a contest to see who could eat the most Scotch Eggs in 15 minutes. Whoever won got $250.
