Slow Cooker Saturday:Overnight Spicy Roasted Chicken

Overnight Spicy Roasted Chicken
Submitted by Monique Moriarty

A little extra planning is needed for this roast chicken recipe done in the crock pot, but the moist, delicious chicken dinner is well worth it.

What You Need:

4 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp, thyme
1/2 tsp. garlic powder
1/2 tsp. pepper
1 lg. roasting chicken
1 lg. onion, quartered

How to Make It:

Mix all the spices together in a large mixing bowl.
Wash the chicken well and pat dry.
Discard any giblets.
Coat the chicken thoroughly with the spice mixture both inside and out.
Place the chicken in a pan and cover with saran wrap.
Refrigerate overnight.
Remove the chicken from the refrigerator.

Place the onions in the cavity of chicken.

Place the chicken in the crock pot.
Do not add any liquid.
Cover and cook on low 8 hours.

Tip:

It is not necessary to add any type of liquid when roasting this chicken. The chicken produces it’s own juices as long as you don’t remove the cover while cooking.
