So, most of ya'll know I'm doing a Gluten Free diet right now. I had to find something I could do that the family would love and that I could post today. Well, I searched around a few Paleo sites (because Paleo is Gluten Free and is more "trendy") and found some recipes. At first I was going to make a meat loaf but realized my ground beef was still frozen at the last minute. I stumbled upon a BBQ recipe HERE and decided to make BBQ Pulled pork in my crock pot. You can use any store bought BBQ sauce, I just wanted to try something new. Sweet Baby Ray's is probably my favorite BBQ sauce on the shelves. I will be serving this with Baked Sweet Potatoes and Grilled Asparagus and Garlic. You can serve the Pork over bread or on a bun, we don't do bread so we just eat the meat.
Pretty simple. You place a pork shoulder or tenderloin in your crockpot with your choice of BBQ sauce, or use the recipe I used, and let it cook from 6-10 hours. This depends on the size of your meat. You can typically pull the pork apart with a fork when it is ready. I promise next week I will have something more interesting. It has definitely been a crazy week!

I LOVE Sweet Baby Ray's also. It's the only kind we use. I'll have to try this recipe. It's been such a long time since we had pulled pork.
