Below is my journal of my 7 Day Gluten Free Trial. This is probably only slightly interesting if you are thinking about diving into the Gluten Free World....
Day 1:
Today wasn't so bad. I had gluten free Chex for breakfast, Greek yogurt for mid morning snack, visalus shake with spinach, a banana, and almond milk for lunch, and Greek yogurt for afternoon snack. After work was tough. I was starving and had to go do blood work at the hospital. Well they have a delicious coffee shop right by the front entrance and I wanted SO BAD to get one of their yummy Blueberry Muffins. I didn't do it. It was also tough cooking dinner. I made Barbecue Chicken, Mac and Cheese, and Sweet Corn for the family. I switched out the mac & cheese and corn with a salad with just veggies. Guess what? All of my salad dressing has gluten. Yup, I ate a dry salad. It wasn't too bad. I was so tired anyway that I just went to bed. I almost made some gluten free brownies, but I just didn't feel up to it. Let's see how tomorrow goes.
Day 2:
Today was great! Had a visalus shake with banana, almond milk, an spinach for breakfast and lunch. I had Greek yogurt for morning and afternoon snack. For dinner i had 3 scrambled eggs with sauteed onions and mushrooms. I snacked on a few gluten free pretzels just now. Going to bed feeling great!
Day 3: (1:35 pm)
I'm sneaking in a post this afternoon. I had a great morning. I ate the gluten free Chex cereal on my way to work. I had to leave for a few hours so when I came back to work I was STARVING. I quickly ate a greek yogurt before I was drug into a meeting. So then lunch came and I wanted something besides my Visalus shake. I could've gone to a Fast Food place or Restaurant, but I'm still very unsure of what IS and IS NOT gluten free. I just drank my shake and snacked on some gluten free cheese puffs I found in the lab. I will make it through today, but I need to find out what I can eat in moments like this. I think I will swing by Whole Foods and see what they have. Still not sure what is for dinner tonight but I have a good mind to make some Gluten Free brownies. I have a mix that only calls for eggs, butter, and water I think.
I'll post tonight before bed.
Day 4:
I didn't get a chance to post last night and here I am posting in the middle of the afternoon again.
Yesterday was just a blur. I was SOOOOO tired when I got off work. When I got home hubby had already cooked dinner, which I couldn't eat. No biggy. I had some Tilapia on the George Foreman with fresh salsa. Then I snacked on some Gluten Free Ginger Snaps I picked up on the way home. I crashed last night at 8pm and slept until 6 this morning.
This morning I had some Honey Nut Gluten Free chex mix on my way to work. I ran out to Whole Foods today for lunch and bought me some frozen lunches. I ate an "Amy's Asian Bowl" thingy. It was AMAZING! I thought it would be nasty because it was rice noodles, but I loved it. I've also had 2 Greek yogurts today. I missed my run last night but I'm pumped and ready for it tonight.
All in all I feel great! Not sure what I'm having tonight, but I'll update the journal later on.
Day 5:
I see there is a pattern with me not updating at night. Last night I made the kids Chicken from the crockpot (soaked in marinade) and vegetables and rice. I ate another Tilapia filet with salsa. The rice was off limits as were the seasoning in the marinade and vegetables. I through some gluten free brownies in the oven before I went on my run(WHICH WAS AMAZING) and had a browning when I came home. I also had a brownie at 3 am when I woke up hungry. No worries, I was way under my calories yesterday.
This morning I was in a hurry and went through the Burger King drive thru. I normally don't but I had to stop at Toyota and have my oil changed so I knew I wouldn't make it to work until later. I work I have tons of food to choose from. So I bought myself a side of eggs and 2 slices of ham. Basically what they would put on a croissant or biscuit. I chose to get it without the cheese because it was unnecessary calories. It filled me up. I've had a 100 calorie greek yogurt since. Here shortly I will have a gluten and dairy free cheese pizza I picked up at Whole Foods yesterday. I'm heading out to dinner tonight with another Marine wife then out to buy our ball gowns for this year's ball. I'll have to behave at dinner time tonight. I plan on buying a steak and veggies. Hopefully they'll have sweet potato. I can eat those plain ALL DAY LONG.
So, how do I feel? Do I notice a difference in my thyroid symptoms? I honestly can't tell a difference. BUT, they are still increasing my dosage and trying to get my levels to normal so that is my issue. I'm dealing with major fatigue some days and I know it is my thyroid. I do feel pretty good. I don't feel that yucky feeling after over eating, which I haven't been over eating. But you know that "OH MY GOD MY BELLY IS SO FULL I WANT TO LIE ON THE FLOOR AND NEVER MOVE AGAIN" feeling. Yeah, I don't get that.
I will keep updating ya'll until day 7. So far, so good. Next week I may remove dairy. Which for me, no big deal. EXCEPT I have to give up my greek yogurt. That is the only dairy I currently eat right now. I'll explain more about the dairy products next week.

Day 6:
Last night I ended up at the ER with a sick baby. No ball gown shopping or dinner with my girlfriend. I ended up at a Burger King Drive Thru on the way home. I ordered a Whopper WITHOUT the bun. With everything but mayo. It was actually pretty good and less than 500 calories. This morning I showed my true strength. We went to a Breakfast at the Barracks for my husband's unit (he is in the Marines) and there was TONS of food. My husband volunteered donuts...so I had to go with the family and watch them order 4 dozen donuts. I didn't order anything. I went to Sonic and ordered just eggs and bacon. I ate my little tray of food and went to the breakfast. There was all types of yummy food spread out. ALL OF IT had some form of bread. Luckily one of the female Marines brought some fruit and I snacked on some grapes and pineapple. I'm still very proud of myself.
For lunch I had a Visalus Shake and some gluten free pretzels. For Dinner tonight I'm cooking BBQ Pork, Baked Sweet Potatoes, and Grilled Asparagus with garlic. Yup, I'm gonna be full. I feel wonderful. I don't even want to eat bread. I'm going to try and finish all my Greek Yogurt and maybe go full Paleo next week. We will see.
Day 7:
Last night went well. I was stuffed from all the food then had a fabulous run. Today, I have honestly only been snacking and not eating any meals. I know this is wrong. I will do better tonight. I still haven't cheated on my gluten.
I am currently looking into my Visalus Shakes and seeing if they are Paleo friendly. If they are, then I will go straight Paleo starting tomorrow. If not, then I will be a Visalus shake drinking cave woman!
I LOVE the gluten free diet. Not because it is a fad and not because I lost a few extra pounds, but because I honestly FEEL better. I do have a thyroid disease and my doctor said this would help with my symptoms. I totally recommend you at least try it for one week. I've heard I will not even see the ACTUAL amazing results until a few weeks.

Wow! Good for you! I have started to look into gluten free, but am having such a hard time. I always forget and pop cereal or a cracker that a kid was eating in my mouth. I have been reading about the effects of gluten on people with MS, which I have had for over 17 years. I have yet to blog about it though. Maybe that would help me commit? Keep it up!
